Paso is all About Creative Winemaking Freedom!

Paso Robles is often referred to as the “wild west” of winemaking, where creativity knows no bounds. Unlike more traditional wine regions, Paso Robles offers winemakers the freedom to experiment with varietals and blends, resulting in wines that are as unique as the region itself.

About Our Vineyard Regions

Paso Robles

Paso Robles, located in California’s Central Coast, is a diverse wine region renowned for its ability to produce exceptional wines across a wide spectrum of varietals.

Its unique terroir, coupled with its warm, Mediterranean climate and significant diurnal temperature shifts, creates ideal conditions for ripening grapes slowly and evenly. This results in wines with concentrated flavors, rich textures, and vibrant acidity, yielding powerful reds like Zinfandel, Cabernet Sauvignon, and Rhône varietals, as well as elegant whites such as Chardonnay and Sauvignon Blanc.

Monterey County

Wine has been a part of Monterey’s history since the late 1700s when Franciscan missionaries planted the first grapevines. However, the modern era of winemaking really began in the 1960s. The region gained official AVA status in 1984, and today, it boasts over 40,000 acres of vineyards.

One of the most fascinating aspects of Monterey County is its varied climate, largely influenced by its proximity to the cool waters of Monterey Bay. In the northern parts of the region, closer to the bay, the climate is cooler, with ocean breezes and fog, making it ideal for grapes like Riesling and Pinot Noir, which thrive in cooler environments. As you move further south into the Salinas Valley, the climate becomes warmer, allowing grapes like Cabernet Sauvignon and Merlot, which prefer warmer temperatures, to flourish.

Edna Valley

Edna Valley, a small appellation nestled within the larger Paso Robles AVA in California’s Central Coast, enjoys a unique terroir ideally suited for cool-climate varietals. Its proximity to the Pacific Ocean provides a moderating influence, preventing extreme temperature swings and resulting in grapes with excellent acidity and balanced ripeness. The valley floor’s alluvial soils, combined with the rolling hills’ diverse soil compositions, contribute complexity and minerality to the wines. This combination of cool temperatures, maritime influence, and varied soils allows for the successful cultivation of varietals such as Syrah and Grenache, as well as Burgundian varietals, showcasing the region’s distinct character and consistently high quality.
