TASTING NOTES
Deep ruby in color, this wine opens with concentrated aromas of blackcurrant, dried berries, and subtle oak spice. On the palate, it’s bold and structured, with dehydrated berry notes lending richness and very round, plush tannins. The mid-palate is dense yet balanced, carrying through to a long, elegant finish layered with hints of baking spice, toasted oak, Barrel aging was 22 months in a mix of 50% new French and American oak.
ABOUT CENTRAL COAST
A masterful blend of terroirs, this wine is sourced from the San Antonio Valley in southern Monterey County and the prestigious Adelaida District of Paso Robles. The warm, dry climate of San Antonio Valley ensures perfect ripening conditions that develop complex flavors and robust tannins, while the high-elevation vineyards of Adelaida, with their unique calcareous soils and cooling maritime influence, add elegant complexity. A small amount (18%) of Merlot was blended into the final wine for a rounder, more supple mouthfeel.

This Reserve Cabernet Sauvignon is a natural partner for grilled ribeye, lamb chops, and slow-braised short ribs. It also shines with hearty dishes like beef bourguignon, mushroom ragù over polenta, or wood‑fired pizza topped with sausage or smoky meats.
