Venue Plans & Updates

Dear Hill & Bach Cellars fans,
As construction continues on the venue in Boerne, Texas, we’re excited to tell you about some of the exciting features that you and your wine enthusiast friends will be able to enjoy:
- Inside the historic Luckenbach house, there will be cozy limestone walls and a relaxed, welcoming vibe.
- 2 wine tasting bars: the Luckenbach Bar in the main building and the Courtyard Bar overlooking our landscaped courtyard.
- A courtyard made for good times and fine wines! It will feature a fireplace patio, a tranquil fountain, and room to dance under the stars to local music.
- Many event options will be possible from bachelorette parties and anniversaries to corporate gatherings.
- An intimate wine dinner for up to 12 in the Courtyard Tasting Room.
- A courtyard party for up to 50 with live music, food, and dancing.
We’ll share more details as construction moves along. Pencil in the date—our grand opening is spring 2026! We can’t wait to celebrate with y’all.
Harvest 2025 Report

Overall, the 2025 Paso Robles, California harvest is considered an outstanding vintage and we are super excited to see how these wines turn out! Why is this vintage considered special?
- We had a temperate spring, steady summer, and a strong berry set.
- A few of the picks were early due to some heat spikes, but overall the harvest stayed smooth and manageable.
- In particular, Cabernet Sauvignon grapes are considered standouts, with Syrah and Grenache also looking great.
We can’t wait to share these new vintages with our fans!

DID YOU KNOW … we “Cold Soak” our red wine grapes?

What is Cold Soaking?
Before fermentation, our grapes are taken fresh-picked from the vineyards and placed into refrigeration for two to four days prior to the fermentation process.
Cold Soaking allows for extended skin contact at cool temperatures which extracts more of the color, flavor and aroma compounds leading to a richer more complex final wine. We believe that by taking this additional step (not taken by most wineries) you will experience and enjoy a superior, more intensely flavored wine.
Thanksgiving Wine Pairings
Texan Style Smoked Turkey Breast
Ingredients:
- 3-4 lb boneless turkey breast
- 2 parts course ground pepper
- 1 part kosher salt
- 3 tbsp butter
Instructions:

Remove the skin from the turkey breast and trim away any fat.

Season all sides with 2 parts coarse black pepper and 1 part kosher salt.

Prepare the smoker for indirect cooking at 275° F using post oak wood chunks for flavor.

Place the turkey breast on the smoker for 2 hours.

After 2 hours remove the turkey breast and place top-side down a piece of aluminum foil. Place the butter on the turkey and tightly wrap the foil around.

Place the turkey breast back on the smoker, top-side down.

Cook until internal temperature reached 165° F.

Remove from the smoker and let rest 20 minutes, loosely covered.

Slice and enjoy with a glass of Hill & Bach wine!
