IT’S HARVEST TIME!!

This week we harvested grapes for our first ever Viognier wine, an aromatic and floral white wine native to the Rhone Valley in France.

These grapes are grown in the Monterey County AVA in California, and are of exceptional quality for this vintage. Past vintages have resulted in gold medal awards in both 2023 and 2024, so here’s to another gold medal year! 

This new wine will be aged 4 to 6 months in new French oak and neutral oak barrels, resulting in a softer mouth feel with subtle hints vanilla and wonderful surprises. We are really excited to bring you this new wine which will be ready in Spring 2026.

DID YOU KNOW … grapes have naturally occurring yeast?

Yes, wine grapes naturally have wild, or ambient yeasts on their skins, which is why spontaneous fermentation — the process of converting grape sugars into alcohol — can occur without the addition of commercial yeast strains. The “powdery film”, or bloom, on the grapes, as seen in the image above, introduces different yeast strains into the winemaking process, influencing the wine’s unique flavors and characteristics and representing the terroir of the vineyard.

SUMMER WINE & BBQ PAIRINGS

A Paso Roble Staple:  Tri-Tip Steak + Cabernet Sauvignon

Tri-tip steak is Central Coast sensation in Paso Robles, where local ranchers perfected the art of grilling it over red oak wood. This pairing, which pairs exceptionally well with our Hat & Cattle Cabernet Sauvignon, has become such a regional staple that many local wineries offer tri-tip and Cab tastings! The cab’s bold tannins and dark fruit notes complement the beef’s rich, smoky character while cutting through its natural fat content. We have a tri-tip recipe below for you to try at your next backyard BBQ!

Hill and Bach Cabernet Sauvignon

This Cabernet Sauvignon is beautifully balanced with its dark fruit characters, warm aromatics and satisfying mouthfeel.

 

Paso Robles Style Coffee-Rubbed Tri-Tip Steak

Ingredients:

  • 1 tri tip roast (2-2.5lbs)
  • 2 Tablespoons ground coffee
  • 1 Tablespoons garlic powder
  • 1 Tablespoons smoked paprika
  • 1 Tablespoon fresh ground black pepper
  • 1 teaspoon ground coriander
  • 1 teaspoon ground chili powder
  • 2 Tablespoons salt
  • 1/2 teaspoon cayenne (optional)

Directions:

  1. Mix all dry ingredients in a bowl.
  2. Cut tri-tip into two pieces along the line where the grain changes.
  3. Coat the two pieces with a neutral oil, rub with coffee mixture. Set aside to marinade about 30 minutes.
  4. Light grill to high, or get your charcoal going and season grill with oil.
  5. Grill steak, turning frequently, until internal temperature is 120-125°F for rare or  130-135°F for  medium-rare (or to your preferred doneness!). This takes ~15-20 minutes depending on size of your steaks.
  6. Allow the steak to rest for 5 minutes and then slice against the grain and serve with a glass of our Hill & Bach Cabernet Sauvignon and your favorite side dishes.

CONSTRUCTION UPDATE

We are seeing lots of progress! This photo shows a historic annex to the main Luckenbach house. Along with the main Luckenbach house, it will provide extra tasting room and lounge space. Look at those amazing old stones, laid in place over a hundred years ago! We are so proud of this heritage and can’t wait to share this new space with y’all soon.
