Greetings Hill & Bach Fans!
During the month of April, we have been making a lot of progress in getting the venue ready. We have defined the look of our interior designs, as you can see in some of the pictures here. We have also been getting the electrical wiring and plumbing in place.
The grand opening is getting nearer and will be announced soon!

DID YOU KNOW … Why Wines Are Aged?

Aging wine is a transformative process where chemical reactions like oxidation and polymerization refine a wine’s structure by softening harsh tannins and mellowing high acidity into a harmonious balance. This maturation also alters the wine’s visual profile, causing reds to fade toward a brick-red hue and whites to deepen into gold.
Interestingly, only a small percentage of wines (5-10%) improve with age; most are intended for early consumption.

FEATURED WINE: Bless Your Heart Rosé

Fragrant aromas of wild strawberries and white peaches are followed by a slight tropical nuance on the bouquet. The palate offers a medium acidity with structure and softness, leading into fresh flavors of Honeycrisp apples. A gentle sweetness emerges on the finish that is a delightful balance of fruit and floral characters.
This is a 100% stainless steel fermented, and a creative blend of 80% Grenache, 15% Syrah and 5% Mourvèdre.

CHEESE & WINE PAIRING: Brie + Rosé

The acidity of our crisp, yet fruity Rosé cuts right through the luxurious creaminess of Brie, acting as a palate cleanser between every decadent bite. Its subtle notes of stone fruit and berries add a sophisticated sweetness that beautifully complements the cheese’s mild, buttery profile.
A SUCCESSFUL DEBUT: the Diva Spring Fling

A few weeks ago, we poured our wines for the first time in public at the “Diva Spring Fling” in Boerne, TX. It was a smashing success with rave reviews for our wines. One lady said our Hat & Cattle Cabernet Sauvignon was the best she ever tasted. And we ran out of our Bless Your Heart Rosé, it was so popular! Thanks to all the divas who stopped by for a taste, and we hope to see y’all at our grand opening this summer!
