LATEST NEWS: Art, Wine and a Good Time!

Hi Folks! This past Memorial Day weekend, we were at the Hill Country Art & Wine Festival pouring our wines, and the response was phenomenal. The true highlight was connecting with so many wonderful people who stopped by to taste, chat, and share their feedback. We are endlessly grateful for the support of our fans — and this is just the beginning!

We are also making continued progress on the Main Street venue, with a big delivery of furniture that came in a few weeks ago, and we are excited to get it all in place. The opening date will be announced soon, so continue to stay tuned.

DO YOU KNOW THE DIFFERENCES … Napa Valley vs. Paso Robles

NAPA VALLEY
  1. Classic Bordeaux varieties, centered almost entirely on structured, age-worthy Cabernet Sauvignon.

  2. Volcanic and alluvial soils. Morning marine fog from San Pablo Bay ensures slow ripening, preserving elegance and firm tannin structure.

  3. Winemaking is rooted in classicism and precision. Cellars favor new French oak and meticulous blending to achieve a highly polished, consistent winery style.

  4. The tasting experience is exclusive and formal. High-end, sit-down tastings ($50–$125+) reflect the region’s prestige and steep production costs.
PASO ROBLES
  1. A varietal focus on diversity. The epicenter of the “Rhône Rangers” (Syrah, Grenache, Mourvèdre), alongside dense heritage Zinfandel and unique Italian grapes.

  2. Rare calcareous limestone soils. The Templeton Gap creates massive 40–50°F diurnal shifts, driving intense phenolic ripeness while locking in crucial natural acidity.

  3. Winemaking philosophy can be rebellious and avant-garde. Unbound by tradition, producers heavily utilize field blends, co-fermentations, and alternative aging vessels like concrete and amphorae.

  4. The tasting experience is a thriving “garagiste” culture where lower fees ($25–$50) often come with direct access to the winemaker in a working cellar.

FEATURED RECIPE PAIRING: Shrimp Fettuccine Alfredo

For a quick dinner, try this easy-to-make pasta dish with a well-chilled glass of our Cactus Bloom Pinto Grigio. Its bright, crisp acidity acts as a natural palate cleanser, balancing the rich butter and Parmesan sauce of this recipe.

FEATURED WINE: Cactus Bloom Pinot Grigio

This wine is lively with an enticing bouquet of vibrant, aromatic notes of tropical fruit and delicate floral nuances with ripe guava, backed by hints of ripe pear. On the palate, the wine is light-bodied and refreshingly crisp, with a bright, mouthwatering acidity that gives it excellent balance and energy. The finish is clean and refreshing, with lingering citrus and floral notes that invite another sip.
