LATEST NEWS: Venue Updates
During the month of January, we saw a lot of progress on our courtyard area. The walls bordering the courtyard went up, along with several decks. We also put in our beautiful outdoor fireplace which will be so wonderful to cozy up to on those cooler nights! More updates coming next month.

DID YOU KNOW … We use the Saignée Method to Make Richer Reds & Rosé Wines?

Saignée (pronounced “sohn-yay”), meaning “to bleed” in French, is the practice of drawing off some juice from red wine fermenting on its skins. This concentrates the remaining red wine—deepening color, tannins, and flavor—while the removed juice is fermented separately into a darker, more intense rosé.
FEATURED RECIPE PAIRING: Pasta Bolognese
FEATURED WINE: Ranger’s Reserve Cabernet Sauvignon

Deep ruby in color, this wine opens with concentrated aromas of blackcurrant, dried berries, and subtle oak spice. On the palate, it’s bold and structured, with dehydrated berry notes lending richness and very round, plush tannins. The mid-palate is dense yet balanced, carrying through to a long, elegant finish layered with hints of baking spice, toasted oak. Barrel aging was 22 months in a mix of 50% new French and American oak.

INTRODUCING OUR NEW Social Butterfly

Don’t be surprised if while going about your day, you meet the new social butterfly in town. Hill & Bach’s soon to be General Manager, Sheila Kelly, has just relocated to Boerne to gear up for the Opening Day. Owners, Richard and Julie, chose Sheila as their GM because she is a hospitality queen. They met Sheila almost two decades ago when she owned her own Irish pub, so they know how welcome she will make winery patrons feel.
Born about an hour north of Dublin in Ireland, Sheila comes to Texas by way of New York and California. She has a trail of friends and acquaintances spanning both sides of the “pond”.
Richard and Julie want to welcome Sheila to Boerne and she wants to welcome you to Hill & Bach Cellars.
