DID YOU KNOW … 2025 Vintage Looks Very Promising

Our winemakers have been working hard in the cellars since the harvest last year and we are all excited about how the wines are evolving. Forbes magazine puts it well “Expectations are high for a stellar 2025 vintage, with winemakers praising the balance and concentration of Cabernet Sauvignon, along with exciting white wines and savory, aromatic Syrah.”

FEATURED WINE: Zindig Zinfandel

Bursting with vibrant red cranberry and black cherry, this wine is filled with juicy and inviting aromas in the glass. On the palate, the wine is bold and expressive with a rich tannin profile and a fresh acidity to balance it. There’s richness in the mouthfeel and the depth of brambly red fruit continues through the finish.

CHEESE & WINE PAIRING Pecorino Romano + Zinfandel

Continuing our theme of “what grows together, goes together“… The Zinfandel grape originates from Croatia, but also has strong links to the Puglia region of Italy where the grape is called Primitivo. In both countries, this bold wine can be paired with hard, aged sheep cheese. The Croatian cheese pairing of Paški Sir (Pag Island Cheese) may be hard to find in Texas, so we suggest to find some Pecorino Romano from Italy and serve it with a glass of our Zindig. This cheese is a sharp, salty, hard cheese aged at least 8 months.
